Apple Cinnamon Bread

Breakfast…maybe dessert? Either way, quick breads are a great way to have a filling snack ready in a short time. No need to let this rise because it is basically cake! Wonderful, delicious breakfast cake. 😀 This is another dish that the Roomies devour within an incredibly short time. I mean, come on, cake for breakfast? Of course, I’ll have a piece!

This is another recipe born out a need to use up ingredients. This time, apples from a giant Costco bag that I bought for Roomie #2’s birthday dinner. I have made dried apples (soon to be posted here), sauted apples (both sweet and savory), and apple pie but I still have apples remaining. My schedule has gotten pretty full lately so I need to have snacks that are ready to eat on the fly. There are only so many muffins a girl can eat so I wanted to branch out. [note: I realize that this bread could be a muffin if I simply baked it in a muffin tin instead. Changing the shape is enough to make it something different in my book!] With this need for new snacks and a glut of apples that would otherwise rot, this Cinnamon Apple Bread was born.

As usual, I like to keep things as simple as possible so that I can make variations of this bread again and again without getting bored. You could add other spices and seasonings. You could use other kinds of fruit (pears would be amazing!!). It doesn’t matter. Do whatever, just make sure that you take into account the amount of moisture in your fruit. If you use something juicy, use less fruit. Drier fruits can be used in higher amounts. Mixing in nuts or dried fruit would also be tasty!

Apple Cinnamon Bread

  • Servings: 8 to 10

Ingredients:

Bread:

  • ½ tsp kosher salt
  • 1½ tsp baking powder
  • 1½ cups flour
  • ½ cup butter, room temperature
  • 1 cup light brown sugar
  • ¼ cup granulated sugar
  • ½ Tbsp cinnamon
  • 2 eggs
  • 1 Tbsp vanilla
  • ½ cup milk
  • 2 apples, chopped

Topping:

  • 2 Tbsp granulated sugar
  • 1 tsp cinnamon

 

Preparation:

  1. Preheat oven to 350* F; prepare a 9” by 5” loaf pan by lining with parchment paper and greasing with oil
  2. Cream butter, brown sugar, and ¼ cup white sugar on medium speed for 2 minutes, until smooth; add eggs, vanilla, and cinnamon
  3. Meanwhile, mix flour, baking powder, and salt in a small bowl
  4. Working in batches, beat flour mixture and milk into the butter mixture (starting and ending with the flour mixture); fold in chopped apples
  5. Top with sugar and cinnamon; bake 55-60 minutes, until a toothpick comes out clean
